Serves: 2
Ingredients:
2 cups rhubarb, chopped
1 cup cabbage, shredded
1 onion, thinly sliced
4 cups chicken or vegetable broth
2 eggs, beaten
1 tablespoon soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
Green onions, chopped (for garnish, optional)
Instructions:
1. In a pot, bring chicken or vegetable broth to a simmer over medium heat.
2. Add chopped rhubarb, shredded cabbage and sliced onion to the simmering broth. Cook for about 8 to 10 minutes or until vegetables are tender.
3. While stirring soup gently, slowly pour beaten eggs into pot in a steady stream. Eggs will cook and form delicate ribbons.
4. Once eggs are cooked, give soup a final gentle stir to incorporate them evenly.
5. Season the soup with soy sauce, sesame oil, salt and pepper. Adjust seasoning to taste.
6. Ladle into bowls and garnish with chopped green onions.
7. Serve hot.
